Been for a long ride? Why not try Emma's savoury spinach protein pancakes for the perfect recovery meal. To make the pancakes, simply place all the ingredients in a blender until you have a smooth batter. Then, fry each pancake for around 2-3 mins on the first side and then flip for another minute. Layer up your pancakes with a quark cheese and mushroom filling and enjoy!

Ingredients: (for 2 portions)
50g fresh spinach, clean
150g quick oats (about 1 ⅔ cup)
300ml skimmed milk (about 1 ¼ cups)
2 eggs
1-2 tablespoons lemon juice
1 teaspoon salt
3 teaspoons baking powder
A few squirts of 1-calorie cooking spray
For the topping:
250g mushrooms
1 tub quark cheese
